4 x 10cm flan tins

  • 50g hazelnuts
  • 50g almonds
  • 50g coconut rasp or grated coconut
  • 30g dark chocolate, finely chopped
  • 2 heaped teaspoons of peanut or almond butter
  • 1 tablespoon agave syrup
  • a pinch of Himalayan salt
  • a pinch of cinnamon

  • 175g cashew nuts (soaked in water overnight)
  • 140g coconut cream
  • 1 ripe banana
  • 1 cup of coconut oil (melted)
  • 75g peanut or almond butter
  • a pinch of ground vanilla or a dash of vanilla extract
  • 1 Googly Fruit 100% Apple, Blueberry & Purple Carrot Squeezy Pouch

  • 2 tablespoons chia seeds
  • 1 Googly Fruit 100% Apple, Blueberry & Purple Carrot Squeezy Pouch

  • Soak the cashew kernels in sufficient water overnight and remove the next day before use.
  • In a bowl, squeeze out the contents of one Googly Fruit Squeezy Pouch into a bowl and stir in the chia seeds. Refrigerate for at least 20 minutes. The consistency should be jelly-like and firm.
  • In a high-performance mixer finely grind the hazelnuts and almonds. Add the grated coconut and the peanut or almond butter and mix again. Add the remaining ingredients and mix until a slightly sticky dough is formed. If the dough is too dry, gradually add a little bit of water.
  • Grease the flan tins with a little melted coconut oil and press the dough on the bottom with your hands. Leave to cool in the refrigerator.
  • For the filling, pour the soaked cashews into a blender. Add the coconut cream, banana and all the other ingredients and mix until a creamy mass is formed. Spread the mix evenly over the bases and refrigerate for at least 6-8 hours.
  • Before serving, fill a piping bag with the topping and pipe it onto the tartelettes. Finally, garnish with some  fresh blueberries.
