Banana muffins are a great way to spend time with Bob Banana. We even include more of the Googly Fruit friends sometimes like Bella Blueberry, Zoe Zucchini and Alfie Apple in this delicious recipe too!
These kids banana muffins can be taken with little ones to lunch, for morning tea or even long trips in the car! A real fruity allrounder and easy baking with Bob!
- 1 cup of oats (80g)
- 1 cup of oat bran (90g)
- ¼ cup flaxseed (40g)
- 2 teaspoons of baking powder
- 4 tablespoons of rapeseed oil
- 1 cup of almond milk (200 ml)
- 1 banana (mashed)
- 1 cup of blueberries (160g)
- 1 teaspoon of vinegar
WHAT TO DO:
STEP 1: Preheat the oven to 180 degrees.
STEP 2: Mash the banana into a creamy consistency.
STEP 3: Mix the almond milk with vinegar and let it stand for about 10 minutes until the liquid congeals.
STEP 4: Meanwhile, mix all the dry ingredients in a bowl and add the oil, the blended banana, blueberries and almond milk. When the vinegar and milk is ready add it too and mix well.
STEP 5: Pour the mixture into muffin cups and place them in the oven. Cook at 180 degrees for 25 minutes.
STEP 6: If you don’t have any fresh blueberries at hand, you can also take frozen blueberries.
Cheeky Tip: The recipe also works as a cake (40 minutes in the oven) or as cupcakes (15 minutes in the oven).
